Asian Peanut Noodles with Vegetables


  • 1 pound soba noodles (can substitute linguine or pad Thai rice noodles).
  • 1 cup broccoli 
  • 1 small red onion sliced
  • 3/4 red pepper sliced
  • ¾ cup sliced mushrooms
  • ½ cup sliced water chestnuts
  • ½ cup chopped dry roasted peanuts
  • 1/4 cup thinly sliced green onion
  • 3 Tbsp. vegetable oil

How to Prepare

  1. Cook noodles per instructions on package. Drain
  2. While cooking noodles, heat oil in a wok or skillet.
  3. Sauté vegetables until desired darkness.
  4. Put noodles in serving dish
  5. Add cooked vegetables to the top of the noodles.
  6. Generously top with Shirlie Jayne’s Asian Peanut salad dressing and toss.
  7. Garnish with green onion and chopped peanuts.
