Asian Peanut Salad with Grilled Chicken


  • 1 ¼ pounds boneless, skinless chicken breasts
  • ¾ pounds soba or linguine noodles
  • 1 cup sliced Persian cucumber
  • ¾ cup matchstick sliced carrot
  • ¾ cup watermelon radishes sliced
  • ½ cup chopped cilantro
  • Shirlie Jayne’s Asian Peanut salad dressing
  • ½ cup chopped dry roasted peanuts
  • 2 limes cut in wedges
  • 2 Tbsp. vegetable oil
  • 2 tsp. Shirlie Jayne’s Savory Everyday Seasoning

How to Prepare

  1. Boil water and follow instructions on package for noodles.
  2. Heat oil in skillet.
  3. Season Chicken with Shirlie Jayne’s Savory Everyday Seasoning.
  4. Cook 3 minutes on each side until cooked through. Can also be grilled.
  5. Assemble by laying a layer of cooked noodles on plate.
  6. Top with sliced chicken, Persian cucumber, watermelon radish, cilantro, and peanuts.
  7. Top with Shirlie Jayne’s Asian Peanut salad dressing.
  8. Serve with lime wedges.
