Baked Southwest Chicken Tacos

A popular and easy to make taco recipe including red onion, avocado, pepper jack cheese and jalapeno peppers. Enjoy the smokey and spicy notes from the Shirlie Jayne's Southwest Ranch Dressing!


  • 1 lb chicken thighs, skinless and boneless
  • 1 medium red onion, diced
  • 8 corn tortillas, warmed for serving
  • 2 avocados, sliced
  • 2 tomatoes diced
  • 1 cup shredded pepper jack cheese
  • 1/4 cup jalapeno peppers, sliced in rounds
  • 1 lime cut into wedges
  • Shirlie Jayne's Southwest Ranch Dressing

How to Prepare

  1. Place the chicken thighs and onion wedges in a large zip lock bag.  Add Shirlie Jayne's Southwest Ranch Dressing to coat chicken.
  2. Marinate for one hour or more, as desired. 
  3. Heat the oven to 350 degrees.
  4. Arrange the chicken and the onions separately on a baking sheet and bake until cooked through and chicken is no longer pink inside.
  5. Let the chicken rest five minutes before thinly slicing into strips.
  6. Place the chicken, onions, diced tomatoes, shredded pepper jack cheese, and jalapeno, and avocado on the warmed tortillas.
  7. Serve with Shirlie Jayne's Southwest Ranch Dressing and lime wedges.
